We’re not always super organised here, and running around after the kids and pets, we’re not always on top of our diaries or remember when special days fall.
But if there is one day that we never forget (or that the kids never let us forget), it’s Pancake Day – or Shrove Tuesday if you are being completely correct.
It’s the only official day after Christmas and their birthdays that we think it’s OK to allow our kids to eat their entire body weight in sugary sweet loveliness after their dinner.
We tend to follow Delia’s basic pancake batter mix but double the quantity as our kids are greedy with their pancakes!
110g plain flour
pinch of salt
2 large eggs
200ml semi-skimmed milk mixed with 75ml water
Our tip is to just throw everything in bowl or jug and use a hand blender to combine – always perfect batter in moments!
Jude’s daughter alone once ate 11 pancakes in one sitting, with her son right behind scoffing 10!
So it’s fair to say that our children love Pancake Day! Even teenagers come out of hiding to flip their own pancakes…
We think it’s not only the fact that they taste so yummy, but that they can decide and construct their own toppings, and it’s a little bit different.
